
*sigh* I'm tired. The reason I'm tired is because I made more work for myself tonight. I thought I would make this really simple Chickpea and Pasta recipe that I had from one of my Weight Watchers cookbooks. Easy enough. I had almost everything that I needed for this. I subsituted the fresh parm cheese with 2% mozz. cheese I had. Looked good until I put the noodles in and started to think wow this is suppose to serve 4? This looks like enough for 8. Did some quick math and realized that I had used 2 cups of dried pasta which in fact did double my recipe. The recipe was suppose to have 2 cups of wet noodles added. OOPS!!! Yeah wouldn't have been so bad except I am trying to track what I eat, calories, etc. so I had to redo the all of the math to figure out all of that. I don't tend to trust the nutritional inforamation that is put with most recipes since different brands of things can change numbers a whole bunch. I'd show you my math sheet that I did to figure all the factors out but I'm sure you'd all just laugh. Anyways I figured out that this lovely dish has 8 servings in it now and that I ate 1.5 cups of it (I think oh I don't know I'm really confused). Anyways the point of me telling you all this is that when you cook pasta make sure you know if the recipe calls for 2 cups dried noodles or if that's wet noodles since that can make a huge difference in your overall calorie intake and the amount of leftovers you have.
